Meaning Marriage in Spanish, this less known tapas combines a pickled anchovy – boquerón and smoked anchovy – anchoa ahumada with fresh tomato and garlic topped on a piece of Catalan Cristal bread, this tapa should be eaten in 2 to 3 bites, giving your palate the freshness of the tomato and the saltiness and sourness of the anchovies – a real Marriage of flavours.
Spanish style suckling pig originates and is most famous in Segovia, the Castile y León region. Also made famous by restaurants such as Botin of Madrid (the oldest restaurant in the world) here in 1862 we air to achieve the same perfection as those that have done it before us. Our chefs cook on a low temp of 140oC for up to three hours to achieve juicy tender meat and a skin that is glass like in its crispness.

Baked Corn "Ribs" with a Coridaner & Galmesan Pesto
An 1862 original dish, our CornRibs marinated in a mixture of spices including Smoked Spanish paprikas, cayenne pepper and sumac. Roasted in the oven at high temperatures to achieve a nice crispiness, the ribs are paired with a coriander pesto and topped with shaved Galmesano cheese, a Galician style Parmesan.
